Here is a list of the RGB values associated with various blocks in Minecraft, both shaded and not shaded. I found this by taking screen-caps and blurring the blocks in gimp, then using a program called "pixie" to get an average color for the block. These colors might not be perfect, but they are close enough. Names might not be right either, I'll correct later.

row-column color name values (shaded values)

Decent Pixel Blocks (the only ones I use)
1-1 Gray Med-dark 75/75/75 (shaded 47/47/47)
1-4 Brown (Dirt) 80/58/41 (shaded 51/37/27)
1-9 Gray (Flat Brick) 100/100/100 (shaded 62/62/62)
2-7 Tan (Sand) 129/125/95 (shaded 80/77/58)
2-8 Gray (Grainy) 80/74/74 (shaded 50/47/47)
3-1 Red 133/31/31 (shaded 81/20/20)
3-2 Orange 133/82/31 (shaded 81/50/20)
3-3 Yellow 133/133/31 (shaded 81/81/20)
3-4 Lime 81/133/31 (shaded 50/81/20)
3-5 Green /31/133/31 (shaded 31/89/31)
3-6 Aqua 31/133/82 (shaded 20/81/51)
3-7 light blu grn 31/133/133 (shaded 20/81/81)
3-8 Blue 63/99/133 (shaded 39/60/81)
3-9 Blue-Purp 73/73/133 ( shaded 45/45/82)
4-1 Purple 81/31/133 (shaded 50/20/81)
4-2 Light Purple 105/45/133 (shaded 64/28/81)
4-3 Pink-purp 133/31/133 (shaded 81/20/81)
4-4 Pink 133/31/81 (shaded 81/20/51)
4-5 Gray Darkest 47/47/47 (shaded 29/29/29)
4-6 Gray Med-light 86/86/86 (shaded 53/53/53)
4-7 White 133/133/133 (shaded 81/81/81)
5-6 Black 13/12/20 (shaded 9/8/13)

Not So Great Pixel Blocks
1-2 Gray (Stone) 72/72/72 (shaded 45/45/45)
1-3 Red (Brick) 119/65/54 (shaded 72/40/30)
1-5 Brown (Grate) 94/76/48 (shaded 58/48/30)
1-6 Brown (Wood) 62/49/31 (shaded 38/30/20)
2-1 Off Gray (Mossy Stone) 53/68/50 (shaded 30/40/30)
2-9 Yellow (Sponge) 105/105/33 (shaded 65/65/21)
4-8 Gray (Coal Rock) 66/66/66 (shaded 41/41/41)
4-9 Off Gray (Dirt Rock) 86/81/78 (shaded 53/50/48)
5-1 Off Gray (Lava Rock) 91/88/75 (shaded 57/55/46)
5-2 Gray (Iron) 118/118/118 (shaded 65/65/65)
5-3 Orange (Gold) 139/93/24 (shaded 83/49/12)
5-4 Brown (Shelf) 59/43/34 (shaded 36/29/20)
5-5 Off (TNT) 105-91/47-67/35-60 (shaded 56/40/36)

I do not use all grays/blacks either. By the time you factor in the shadows, values can get real close to each other, making them redundant. I use the following for grays: Shaded 5-6 Black, 5-6 Black, Shaded 4-5 Darkest Gray, Unshaded 4-5 Darkest Gray, Shaded 4-6 Med-Lgt Gray, Shaded 1-9 Gray Flat Brick, Unshaded 1-1 Med-Drk Gray, Unshaded 4-6 Med-Lgt Gray, Unshaded 1-9 Gray Flat Brick, Unshaded 4-7 White. That's enough to do the job, though I don't love the flat brick.
